There's a little hole-in-the-wall restaurant in Little Italy that J and I love and eat at every single time we're in the city, called Piacere. We LOVE spice, so we always ask for this hot chili oil they have to top our entrees with. A couple of weeks ago, when my girlfriend Amy and I were there, we ate SO much Italian food and quickly realized that every restaurant had their own version of this spicy oil - so we decided to get the recipe and make it ourselves! We learned that timing is everything and the longer you can cook it the better, but for our first go - it was amazing! If you're spice lovers like us, you'll love having this in your cabinet. We've already used it 2-3 times since making it a few nights ago!
Here are the steps -
Spicy Chili Oil:
On the stove top, add 3-4 cups of olive oil in a medium size pot on low. Slowly stir in about a two tablespoons of crushed red pepper and repeat every hour with one tablespoon of crushed red pepper. The red pepper will slowly start to dissipate and cook into the oil, making it spicier and spicier. We cooked ours for about 4 hours for our initial go, but the restaurant in NYC told us he cooks some batches for as long as three days, only turning off a night. The longer the better, basically!
That's all! If you make a homemade pizza soon, post a photo on instagram and tag me - I'd love to see them!
BON APPÈTIT!
